MOROCCAN Stuffed PEPPERS
MOROCCAN Stuffed PEPPERS
Ingredients:
1 cup (250 mL) of orange or tomato juice
1/4 cup (60 mL) of marmalade
1/4 cup (60 mL) of any nut butter
1 tablespoon (15 mL) of ras el hanout (or 1 teaspoon/5 mL each curry powder, cinnamon and ground cumin)
1 teaspoon (5 mL) of your desired very hot sauce
1/2 teaspoon (2 mL) of sea salt
A 19-ounce (540 mL) can of chickpeas, worn out and rinsed
1 carrot, shredded
1/2 cup (125 mL) of raisins or sliced dried apricots
1/2 cup (125 mL) of pine ridiculous or pistachios
1 cup (250 mL) of couscous
6 pink, yellow or orange bell peppers
2 cups (500 mL) of water
Leaves to 1 bunch of mint, pretty thinly sliced
Directions:
