DITALINI AND BEANS

7 oz. (200 g) dried white beans
7 oz. (200 g) dried cannellini beans
7 oz. (200 g) dried borlotti beans
(cranberry beans)
2 tbsp. (30 ml) further-virgin olive oil
7 oz. (200 g) onions (pertaining to 3 tiny),
chopped
3 1/2 oz. (100 g) carrots
(in excess of 2 tiny), peeled
and chopped
3 1/2 oz. (100 g) celery
(relating to 4 stalks), chopped
1 sprig refreshing thyme
8 1/2 cups (2 l) water
Salt and recently floor black pepper
to style
5 oz. (150 g) ditalini
(or other reduced pasta)
Soak all the beans individually inside chilly water right away; drain.
Warm the oil inside a substantial pot and sauté the greens previously mentioned medium.
