Harvest Thyme Rice
Ingredients:
butter, without salt
carrots, raw
onions, raw
raisins, seeded
apple juice, canned or bottled, unsweetened, without added ascorbic acid
lemon juice, raw
sugars, brown
salt, table
spices, thyme, dried
spices, cinnamon, ground
spices, cardamom
rice, white, long-grain, regular, unenriched, cooked without salt
apples, raw, with skin
nuts, pine nuts, dried
Directions:
Melt butter in large skillet on medium heat.
Add carrots and onions; cook and stir 5 min.
or until crisp-tender.
Add raisins, juices, sugar and seasonings; mix well.
Reduce heat to low; cover.
Simmer 10 min.
Stir in rice and apples; cook until heated through, stirring occasionally.
Sprinkle with pine nuts.
