Most Elegant Beet Soup Recipe
Ingredients:
beets, raw
carrots, raw
soup, beef broth or bouillon canned, ready-to-serve
vinegar, distilled
dill weed, fresh
cream, sour, cultured
Directions:
Cook vegetables through in bouillon.
Add in vinegar.
Use a potato masher to crush vegetables for coarse consistency soup or possibly puree in blender in small batches for fine consistency soup.
The pureed version is very elegant.
Top soup with 1 Tbsp.
of lowfat sour cream.
Sprinkle with 1/4 tsp.
dill weed.
Serve warm or possibly chilled.
