Autumn Chicken And Bean Bonanza Recipe
Ingredients:
onions, raw
peppers, sweet, green, raw
spices, garlic powder
oil, olive, salad or cooking
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
spices, cumin seed
spices, cinnamon, ground
beans, snap, green, raw
beans, snap, green, raw
beans, kidney, all types, mature seeds, raw
beans, kidney, all types, mature seeds, raw
tomatoes, red, ripe, raw, year round average
raisins, seeded
Directions:
Saute/fry onion, pepper, and garlic in oil in medium saucepan 2 to 3 min.
Add in chicken, cumin, and cinnamon; cook over medium-high heat till chicken is lightly browned, 3 to 4 min.
Add in beans, tomatoes, and raisins; heat to boiling.
Reduce heat and simmer, uncovered, till slightly thickened, 5 to 8 min.
Season to taste with salt and pepper.
Additional NotesTIPS: Frzn minced onion and green pepper, and prepared garlic can be used.
The dish is delicious served over cooked rice, couscous, or possibly pasta.
Can be prepared 1 to 2 days in advance; chill, covered.
