Gluten-Free Cherry Chocolate Granola

Ingredients:
oats
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
oil, olive, salad or cooking
honey
nuts, cashew nuts, raw
nuts, almonds
cherries, sweet, raw
spartan, real semi-sweet chocolate baking chips,

Directions:
Preheat oven to 350 F.
In a large bowl, combine oats, coconut, oil, honey and nuts.
Spread in an even layer into a jelly roll pan lined with parchment paper.
Bake for 20 minutes, stir and return to the oven for another 18 minutes.
Remove from oven.
Allow the granola to cool and then add dried fruit and chocolate.
